Why do we spell words with er, ir and ur when they all make the same sound /er/?

I'm attempting to teach some of my readers the phonetics about r-controlled vowels, ar, er, ir, ur and or. They are having difficulty spelling words like firm, term, hurt, bert, etc. Why do we use different spellings for the same sounds and how can I help my students identify which spelling of the sound is correct?
